Cooking Instructions: 

  1. Preheat the oven to 180 degrees Celsius.
  2. Wash the fish lightly under cold running water. Wash the fresh produce. Peel and cut the potatoes into small, bite-size pieces. Roughly chop the garlic. Chop the parsley and basil roughly, including the stalks. Slice the lemon in half and cut 2 wedges and set aside for serving.
  3. Add the cherry tomatoes to a baking tray. Drizzle 2 tbsp olive oil and a generous pinch of salt, pepper and sugar. Put the tray in the oven for 25 min until the tomatoes are sweet and tender.
  4. Meanwhile, boil a kettle.
  5. Add the potatoes to a pot, cover with boiled water and a pinch of salt and bring back to the boil over a high heat. Once boiling, cook for 10-15 min until the potatoes are fork-tender.
  6. To prepare the pesto, add the garlic, parsley and basil to a mortar and grind to a coarse paste. Add the shredded cheese directly into the mortar and continue to grind together to make a paste. Drizzle over enough olive oil, (around 2 tbsp) to loosen the mix and add a squeeze of lemon juice. Season with a pinch of salt and pepper and set aside.
  7. Drain the cooked potatoes and leave them to steam-dry for 5 minutes.
  8. To prepare the lemon mash, return the potatoes to the pot. Add 2 tbsp of lemonjuice,  butter  and 1 tbsp oliveoil. Mash until smooth. Season with a pinch of salt and pepper.
  9. Heat a large, wide-based pan over a medium-high heat with 2 tbsp of oliveoil. Pat the fish dry and season the skin generously with salt. Once the pan is hot, place the fish, skin-side down and cook for 4 minutes. Flip the fish and cook for a further 1 minute.
  10. Serve the fish over the lemon mash with the sweet cherry tomatoes and pesto to the side. Garnish with a wedge of lemon. Enjoy!
