Cooking Instructions:

  1. Boil a kettle.
  2. Wash the fresh produce. Dice the potato. Slice the onion. Slice the carrots in rounds. Chop the parsley.
  3. In a small bowl, whisk together vegetable stock cubes and 3 ¾ cups hot water.
  4. In a pot, combine potatoes, cauliflower, onion, carrots, curry and cumin powder, ½ tsp each salt and pepper, and the stock. Cook for 15-20 minutes or until the potatoes are fork tender.
  5. Stir spinach into ingredients. Let stand 5 minutes until wilted.
  6. Ladle soup into serving bowls. Garnish parsley. Enjoy!
