Cooking Instructions:

  1. Preheat the oven to 220 degrees Celsius.
  2. Wash the fresh produce. Cut the the potatoes into bite-sized chunks, place on an a baking tray and coat with 1-2 tbsp olive oil. Season generously with salt and pepper and put in the oven for 20-25 minutes or until golden.
  3. Meanwhile, peel and finely dice the red onion. Chop the tomatoes coarsely . Chop the basil coarsely, including the stalks. Rinse and chop the black olives into 'O's. Peel and finely chop or grate the garlic.
  4. To prepare the salsa - combine the tomato, basil, capers, olives and 2-3 tbsp olive oil. Add about half of the diced onion (adding up raw onion will depend on your preference). Mix well and season lightly with salt and pepper. Set aside until serving
  5. Drizzle the mushrooms with 1-2 tbps olive oil, place on a baking tray and put in the oven with the potatoes. Cook for 10 minutes or until tender.
  6. Chop the mozzarella and mix with the chopped garlic and remaining diced onion.
  7. Remove the mushrooms from the oven and pour any liquid away. Spoon the mozzarella mix onto the mushrooms. Return to the oven for 10 minutes or until the cheese is melted and golden.
  8. Place the ciabattas on an oven tray (use the mushroom tray if you want to save space) for 8-10 minutes. Once done, remove the ciabattas from the oven and cut open carefully!.
  9. Place each mushroom on a ciabatta and top with the salsa. Serve the potatoes on the side. Enjoy!
